Davina's Refined Sugar Free Tea Loaf (By Sarah)



If you are trying to give up or cut down on refined sugar, I can highly recommend Davina McCall's book, 5 Weeks to Sugar Free for some yummy recipes. I have given up many things over the years, including alcohol, but refined sugar has been by far the hardest, so having recipes like this have really helped give me a sweetness fix, without reaching for a cake or a chocolate bar.


You will need:


A loaf tin, lined with baking paper.

350g dried mixed fruits. Something with orange in it is really nice.

200ml freshly brewed tea

50ml Maple Syrup (I use honey)

2 tsp baking powder

250g whole meal spelt flour

1tsp mixed spice (I use cinnamon)

2 eggs


Method:


Put the dried fruit in a bowl and pour the hot, freshly brewed tea over the top. Add the honey or maple syrup and stir. Leave the fruit to soak up the mixture for at least a few hours, preferably overnight.


Pre-heat the oven to 180 degrees C (Gas mark 4) and line your loaf tin with baking paper


Sieve the flour into a large bowl, stir in the baking powder and mixed spice or cinnamon. Add the fruit mixture and any excess liquid, plus two eggs. Mix everything thoroughly and then spoon the mixture into your loaf tin.


Bake on the middle shelf of the oven for about an hour. You can check whether its cooked by poking a skewer in the middle, if it comes out clean the loaf is cooked.

Once cooked, leave the loaf in the tin to cool for 10 minutes, before removing it from the tin to cool on a cooling rack.


Thickly slice and serve buttered with a nice cup of tea! This could also be a good alternative to Christmas cake this festive season.
