Italian Tomato Salad

This was a big hit at our summer retreat where we had a delicious rainbow lunch to match our chakras, and it is really simple to make!

You will need:

The freshest, reddest, juiciest tomatoes that you can find. Beefsteak tomatoes are good.

Fresh basil and parsley

Olive oil

Red wine vinegar

Lemon juice

Diced red onion

Sea salt




Slice the tomatoes about 1cm thick and arrange on a large, shallow dish.

Make the marinade by adding the olive oil, red wine vinegar, lemon juice, diced onions, chopped basil and parsley, sea salt and crushed garlic to a bowl and whisking it together. Pour over your sliced tomatoes.

Add sliced mozzarella on the top and serve. It's that simple! Enjoy.
